Tomato Chutney

This is fairly easy to make.
Very versatile.

Large Roma tomatoes (chopped) 6
Whole dried red chilies 3-4
Salt 1 tsp
Canola oil  2-3 Tbs
White wine vinegar 1/4 cup
Heat some oil in a pan.
Add the tomatoes, the chilies and the salt all at once.
Cook for 45 min on medium high heat or until the tomatoes are mushy and well cooked.
Add the vinegar and cook for another 5-7 mins.
Blend well and store in a clean glass container.
